Homemade Healthy Chicken Curry: Gluten Free & Slimming World Friendly

Hi Everyone!

Today’s recipe is one of my favourite healthy recipes because I’m a big fan of curry! Just like all my recipes so far, it’s healthy, it’s homemade and perfect as part of your weightloss plan. They’re all gluten free, paleo, weight watchers and slimming world friendly.  They’re also delicious (if I do say so myself!).

Ingredients:

  • Coconut oil/olive oil/Frylite (whatever you prefer or what’s on your plan)
  • Chicken
  • Tinned tomato or homemade tomato sauce-recipe is here
  • 250ml of chicken stock (I prefer Momos because it’s free range and gluten free)
  • 1 chopped onion
  • 1 chopped pepper (capsicum)
  • 1 thumb size piece of ginger finely chopped
  • 2 cloves of garlic finely chopped
  • 1 chilli finely chopped
  • 1 tbsp of smoked paprika
  • 1 tbsp of coriander seeds
  • 1tbsp of dried coriander
  • 1tbsp of Garam Masala
  • 1 tsp of turmeric
  • 1 tsp of cumin
  • 1 tsp of cinnamon
  • Large handful of spinach

Method:

  1. Cook the chicken in oil until white
  2. Add onion, pepper (capsicum), ginger, garlic and chilli until soft
  3. Stir in tomatoes and add all herbs
  4. Slowly add in the stock bit by bit
  5. Simmer for 20 mins, stirring occasional
  6. Add spinach until it wilts
  7. Serve

Serving Options:

This is delicious on it’s own or with some brown rice or quinoa

Top Tips:

*****For an even quicker version use 1tbsp each of garlic granuals, chilli flakes and ground ginger instead of using them fresh

****Add in 2 tbsps of Greek or Natural yogurt for a healthy but creamy alternative
